Verification and Validation Studies
Verification and validation are essential to an effective HACCP and sanitation plan. The sixth principle of HACCP requires that companies establish verification procedures. As the purpose of a HACCP plan is to prevent food safety hazards, the purpose of verification is to provide a level of confidence that the plan is based on sold scientific principles and is adequate to control the hazards associated with your products and processes.Verification activities can include things such as a systematic verification that prerequisite programs are functioning properly and effectively, verification that your Critical Limits are indeed adequate to control a stated hazard, and audits of your HACCP records or even your entire HACCP program. Remember that the HACCP plan must include verification not only for individual CCP’s but also for the overall plan.
